We have some sensitive foodies in our family. With changing our diet to gluten and dairy free, we have seen some great changes for our family. Our kids’ eczema has improved significantly. My KP has improved. Scott’s inflammation is much better. Our hope in sharing recipes and information is that we can help others who are looking to make a diet change for their health.

GF & DF Coconut Lime Chicken

Ingredients:

  • 2.25lbs of chicken cooked and shredded. (I use Instant pot to cook mine. Add chicken to pot, drizzle with olive oil, set to poultry setting and cook for 40 minutes).
  • 1 15 oz can coconut milk (full fat)
  • 1/2 tsp salt
  • 2 whole limes juiced or 1/4 cup lime juice.
  • 1/2 cup chicken stock (If you cooked your chicken in instant pot, you can use the stock from that)
  • 2-3 tsp garlic powder. 
  • 1/4 of a bunch of cilantro.

Instructions:

  • Cook chicken your preferred method and shred. 
  • Heat a larger pan to medium heat, add stock, lime juice, coconut milk, garlic powder, salt. 
  • Stir sauce and add shredded chicken to pan. 
  • Cover and let simmer on medium low heat for 5-10 minutes. 
  • Sprinkle with cilantro.
  • Serve with rice, potatoes, veggies, or pasta. 
  • Enjoy!
