GF & DF Coconut Lime Chicken

Ingredients:
- 2.25lbs of chicken cooked and shredded. (I use Instant pot to cook mine. Add chicken to pot, drizzle with olive oil, set to poultry setting and cook for 40 minutes).
- 1 15 oz can coconut milk (full fat)
- 1/2 tsp salt
- 2 whole limes juiced or 1/4 cup lime juice.
- 1/2 cup chicken stock (If you cooked your chicken in instant pot, you can use the stock from that)
- 2-3 tsp garlic powder.
- 1/4 of a bunch of cilantro.
Instructions:
- Cook chicken your preferred method and shred.
- Heat a larger pan to medium heat, add stock, lime juice, coconut milk, garlic powder, salt.
- Stir sauce and add shredded chicken to pan.
- Cover and let simmer on medium low heat for 5-10 minutes.
- Sprinkle with cilantro.
- Serve with rice, potatoes, veggies, or pasta.
